Flour of ancient Sicilian durum wheat, straw-yellow color; smell of durum wheat semolina and irregular granulometry, typical of flour milled with natural stone.

100% Italian durum wheat.
USE

Flour suitable for the preparation of homemade bread and savory baked products (pizza in baking pan, focaccias, savory pies), whose dough requires medium leavening times (8-12h) and good hydration (65%). Compared to other flour of ancient grains, it is easier to work even in purity, especially in the case of the tumbled product.
