Flour suitable for dough with short rising times (4 h) and low hydration (about 50%): ideal for confectionery products from bakery and small dry pastries (cakes, shortbread, biscuits), crêpe and pastelle, fried cakes (zeppole, frappe, etc.). Mixed with flour of greater strength can be used for bread making, giving more softness to the crumb.
